Dashimaki Tamago

Dashimaki tamago is a rolled omelette built from many thin layers of egg loosened with dashi stock and a little soy and sugar, cooked in a rectangular pan and shaped as it goes. The result is soft, moist, and faintly sweet-savoury, sliced into blocks. Because the egg is seasoned with fish stock it is not vegetarian. Kansai keeps it savoury and dashi-forward; Tokyo's atsuyaki tamago is noticeably sweeter.
