Maki Sushi

Maki is sushi rice and fillings rolled in nori and sliced into rounds. Thin rolls (hosomaki) hold one filling — tuna, cucumber, pickled radish; thick rolls (futomaki) layer several. The rice-outside 'California roll' style is largely an overseas invention that has only partly filtered back. Vegetable rolls such as kappa (cucumber) and kanpyo (gourd) are among the few reliably vegetarian sushi options.

DETAILS

OriginORIGIN
Rolled sushi is centuries old. The uncut whole roll eaten facing a lucky direction in silence at Setsubun in early February — the 'ehomaki' — is a modern marketing tradition that started in Osaka and spread nationwide through convenience stores.
How to EatHOW TO EAT
Eat each slice in one bite, by hand or chopsticks, dipping a corner lightly in soy. Do not drown it, or the nori goes soggy and the roll slips apart.
