Chirashi Sushi
Chirashi means 'scattered'. In restaurants it is a bowl or box of sushi rice covered with sliced raw fish, tamago, and vegetables — essentially deconstructed nigiri, generous and colourful. The home version (gomoku or bara chirashi) is different: cooked and pickled ingredients such as shiitake, lotus root, and carrot mixed through the rice, made for Girls' Day in March. Visitors ordering 'chirashi' expecting the raw-fish bowl sometimes get the cooked, vegetable one.
